When celebrated writer Giddens performed his alternative military service in the noodle-loving Ershui Township two years ago, he adopted the eating habit of the locals by eating noodles for breakfast and “Aqin Aromatic Stir-fried Noodle” on Yuanji Rd. has become his favorite noodle store.
Aqin’s stir-fried noodles are oily but not overly cloying, and it has a tender, chewy texture. According to the owner, after the noodles are boiled, they are mixed with oil, allowed to cool down and placed in the refrigerator.
The next day, the noodles are stir-fried under high heat to produce the unique tenderness, chewiness and slightly burnt flavor.
