Old Chef’s Duck Thick Soup is made by blanching, deboning and cutting the duck meat into strips; duck bones are used to stew the soup-stock, and duck meat, bamboo shoots, preserved Chinese cabbage, ginger strips, Jew’s ear and mushroom are added to the pot and cooked.
The delicious duck meat is free from gaminess and astringent taste. Soy sauce stewed and soft-boiled eggs are another specialty of the store.
