Chen Fang-mei, who grew up in a family famous for the management of well-known Hsiyueh (Happiness) bakery store in Lukang township, is good at making wedding cakes and pineapple cakes. She got involved in making pineapple cakes by accident. One time as she thought of the taste of original pineapple cakes she ate in childhood, she found that those sold on the market, though big and cheap, were not real pineapple cakes in the sense that their filling was not crushed pineapple curd.
Tsai Ming-chieh, the manager of the bakery, turned to the sale of pineapple cakes also because he was so used to the taste of traditional pineapple cakes made by his mother and grand-mother during her childhood.
Although the Chen family had the expertise in making cakes, it was only after trials and errors that they mastered the secret of making good pineapple cakes. Skills involved are not that tough.
