The most famous noodle in Ershui is “Daming’s Noodle on Fire”, which is said to be something a visitor must not miss. Excels at frying noodles, Ah-Ming starts by frying chopped green onions and garlic, then the pot is set on fire - somewhat scary at the first sight. Ah-Ming maneuvers the pot in agile movements, much like kong-fu practice.
