Vat-bottom soy sauce is usually taken out and sold after the main soy sauce is sold out. Since the soy sauce at the bottom of the fermentation vat is particularly fragrant with small quantities, it is very rare. San Yi Quan He De Soy Sauce Factory, a century-year-old black bean soy sauce factory in Changhua, is famous for producing vat-bottom soy sauce which is brewed from pure black bean and is thicker and purer than ordinary soy sauce even after dilution.
Nowadays, however, the factory produced only a small amount of vat-bottom soy sauce since the owner, the grandson of the founder, no longer make soy sauce as his main job, and many of the equipments have been damaged by time and earthquakes. It has been transformed into an educational venue for food ingredient by opening for tours and explaining visitors the brewing process of vat-bottom soy sauce, and hence, achieves important inheritance work in another way.
